Hazelnut and Cherry Friands

    Using hazelnut meal makes these friands gluten free and taste nuttier than the traditional French friands. When in season, use fresh pitted cherries.

    Makes: 12 friands

    • 6 egg whites
    • 175g butter, melted
    • 1 cup (120g) hazelnut meal
    • 1 1/4 cups (180g) icing sugar
    • 1/2 cup (75g) plain flour
    • 150g frozen pitted black cherries, thawed, drained

    1. Preheat oven to 200° C. Grease 12 x ½-cup (125ml) oval friand pans; stand on a oven tray.
    2. Place egg whites in a large bowl; whisk until frothy. Stir in melted butter, hazelnut meal, sifted sugar and flour.
    3. Spoon mixture into prepared pans; top with drained cherries. Bake in preheated oven for 20 minutes. Set friands in pan aside for 5 minutes; turn out friands, top-side up, onto a wire rack to cool.
