Italian Seafood Stew

    This seafood stew has all the rich flavours of Italy...tomatoes, basil, garlic, white beans with the addition of seafood. It has such wonderful depths of flavour that your family will think they are eating at an Italian restaurant!

    • 2 tablespoons olive oil
    • 1 brown onion, finely chopped
    • 2 cloves garlic, crushed
    • 2 sticks celery, sliced
    • 1 large zucchini, diced
    • 2 tablespoons tomato paste
    • 1/2 cup dry white wine
    • 1 (400g) tin diced tomatoes
    • 500g seafood marinara mix
    • 250g peeled king prawns
    • 1 (400g) tin cannellini beans, rinsed, drained
    • 2 tablespoon lemon juice
    • 1/3 cup chopped fresh basil
    • salt and freshly ground black pepper

    1. Heat the oil in a large saucepan over medium-high heat; add onion, garlic and celery. Cook, stirring, for 3 to 4 minutes or until softened.
    2. Add the zucchini and cook, stirring, for 2 minutes. Add the tomato paste and wine and cook for 2 minutes. Add the tomatoes and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes.
    3. Add the seafood and beans and simmer, covered, for 5 minutes or until seafood is just cooked through. Stir in lemon juice and basil. Season with salt and pepper.
