Chicken Tom Yum Goong

    This flavoursome soup is low in fat and super easy. I use a packet soup mix for convenience but add extra ingredients to make it taste homemade.

    Serves: 4 

    • 4 (50g) packets tom yum goong thai soup mix
    • 2 tablespoons soy sauce
    • 2 tablespoons lime juice
    • 1 tablespoon fish sauce
    • 2 cups shredded barbecue chicken
    • 125g snow peas, chopped
    • 1 cup small broccoli florets
    • 1 bunch baby choy sum, chopped
    • 1/2 cup fresh coriander leaves
    • 1/2 cup fresh mint leaves

    1. Bring 1.5 litres (6 cups) water to the boil in a large saucepan. Add the flavour, oil and chilli sachets from soup packets with the soy sauce, juice and fish sauce and stir to combine.
    2. Add the noodles from the soup packets and boil for 1 minute. Add the chicken, peas, broccoli and choy sum. Cook for 2-3 minutes or until vegetables are tender.
    3. Stir in the coriander and mint. Serve.
