Mexican Chipotle Chicken

    Chicken in chipotle sauce is a classic Mexican dish. Chicken fillets are simmered in a spicy sauce with chipotle peppers and cream. Delicious served with steamed rice or warm flour tortillas.

    • 900g chicken thigh fillets
    • 1/4 teaspoon garlic powder
    • salt and ground black pepper to taste
    • 2 tablespoons vegetable oil
    • 3 chipotle peppers in adobo sauce
    • 1 cup thickened cream

    1. Season chicken thighs with garlic powder, salt and pepper.
    2. Heat oil in a large frying pan over medium to high heat. Saute chicken until browned, about 5 to 6 minutes per side.
    3. Mash chipotle peppers in a bowl with a fork and mix with cream. Pour over browned chicken and simmer until chicken is fully cooked, about 10 minutes.
