Traffic Light Sandwiches

    These traffic light sandwiches are a novel way of getting the kids to eat a variety of sandwich fillings. They are perfect for school lunch boxes or picnics. The hummus can be replaced with margarine or spreadable cream cheese.

    Serves: 1 

    • 2 slices wholemeal bread
    • 1 tablespoon hummus
    • 2 slices Cheddar cheese
    • 1 cherry tomato, halved
    • 2 thin slices avocado

    1. Place one slice of bread on a flat surface. Spread half the hummus on top and add one slice cheese.
    2. Place tomato halves along top third of bread slice (on top of cheese). Place avocado along the bottom third of bread slice (on top of cheese) leaving a strip of exposed cheese in the centre. Cut remaining cheese slice in half and fold half over to make a thick strip of cheese. Place cheese strip on bread in between tomato and avocado. Set aside (or eat!) remaining half of cheese slice!
    3. Spread remaining bread slice with remaining hummus. Using a 2cm round cutter, cut 2 rows of 3 circles from remaining bread, to form two sets of traffic lights. Place bread over filling, making sure cherry tomato halves are exposed through the top two holes. Cut each sandwich in half to make two traffic lights.
