Carrot, Apple and Sultana Muffins

    These muffins are the perfect way to get some extra fruit and veg into the kids without them even noticing! The apple can be replaced with grated pear, if you prefer. Store the muffins in an airtight container for up to 3 days or in freezer for up to 2 months.

    Ingredients
    Makes: 12 muffins

    • 2 cups (300g) self-raising flour
    • 1/2 teaspoon ground cinnamon
    • 1/2 cup (110g) brown sugar
    • 80g butter, melted
    • 2/3 cup (160ml) milk
    • 1 egg
    • 1/2 cup grated carrot
    • 1/2 cup grated apple
    • 1/3 cup sultanas

    1. Preheat oven to 200 degrees C. Line a 12-hole (1/3-cup capacity) muffin pan with paper cases.
    2. Combine flour, cinnamon and brown sugar in a large mixing bowl. Whisk melted butter, milk and egg in a jug until combined. Pour into dry ingredients. Stir until just combined, trying not to over mix. Fold in grated carrot, apple and sultanas. Spoon mixture evenly into paper cases.
    3. Bake for 18 to 20 minutes in preheated oven or until cooked when tested with a skewer. Stand for 5 minutes before turning out onto a wire rack to cool.
