Asian Slaw

    The combination of Chinese cabbage, carrot, onion, sprouts and a spicy Thai dressing make this slaw delicious and versatile. Serve it with satay chicken skewers, as a filling for prawn sang choy bau or with your favourite grilled meats. I add peanuts for extra crunch but you can use fried shallots if you prefer.

    Ingredients
    Serves: 4 

    • 3 cups shredded Chinese cabbage (wombok)
    • 1 large carrot, grated
    • 1 cup bean sprouts
    • 3 green onions, thinly sliced
    • 1/2 cup chopped coriander leaves
    • 1/2 cup chopped roasted peanuts
    • 2 tablespoons sweet chilli sauce
    • 2 tablespoons lime juice
    • 1 tablespoon peanut oil
    • 3 teaspoons fish sauce

    1. Combine wombok, carrot, sprouts, green onion, coriander leaves and peanuts in a large bowl.
    2. Whisk chilli sauce, lime juice, peanut oil and fish sauce together in a small bowl until combined; pour over the slaw mixture and toss gently to combine. Serve immediately.
