These apple fritters are comfort food at its best! I add mixed spice for extra flavour and serve them with vanilla or caramel ice cream for a delicious dessert. The apple slices can be replaced with sliced pear or pineapple.
Combine the flours, sugar and spice in a medium bowl; make a well in the centre. Beat egg and milk together in a bowl; pour into the well and mix until you get a smooth batter.
Heat the oil in a wok or a large, deep saucepan. Dip apple slices in the batter then carefully place in the hot oil; deep-fry slices in batches, until crisp and golden. Drain fritters on kitchen paper.
Serve fritters with ice cream, drizzled with maple syrup.
