Spiced Apple Fritters

    These apple fritters are comfort food at its best! I add mixed spice for extra flavour and serve them with vanilla or caramel ice cream for a delicious dessert. The apple slices can be replaced with sliced pear or pineapple.

    Serves: 4 

    • 1/2 cup (75g) plain flour
    • 1/2 cup (75g) self-raising flour
    • 1/4 cup (55g) caster sugar
    • 1 teaspoon mixed spice
    • 1 egg, beaten
    • 3/4 cup (180ml) milk
    • vegetable oil, for deep-frying
    • 2 large green apples, peeled, cored and sliced into (1cm thick) rings
    • vanilla ice cream, to serve
    • 2 tablespoons maple syrup

    1. Combine the flours, sugar and spice in a medium bowl; make a well in the centre. Beat egg and milk together in a bowl; pour into the well and mix until you get a smooth batter.
    2. Heat the oil in a wok or a large, deep saucepan. Dip apple slices in the batter then carefully place in the hot oil; deep-fry slices in batches, until crisp and golden. Drain fritters on kitchen paper.
    3. Serve fritters with ice cream, drizzled with maple syrup.
