Watermelon and Feta Salad with Rocket and Spinach
This salad features watermelon, feta cheese, rocket and baby spinach tossed with a simple homemade balsamic vinaigrette.
Ingredients

- 3 tablespoons extra-virgin olive oil
- 2 teaspoons white balsamic vinegar
- 1/2 teaspoon salt
- 40g rocket leaves
- 60g baby spinach leaves
- 1 red onion, thinly sliced
- 150 g grape tomatoes, halved
- 75g crumbled feta cheese
- 2 cups bite sized watermelon chunks

- Whisk the olive oil, vinegar and salt together in a small bowl; set aside.
- Combine the rocket, spinach, onion and tomatoes in a large salad bowl. Drizzle the vinaigrette over the salad mixture; toss to coat. Add the feta cheese and watermelon to serve.
