Absolutely Fabulous Prawn Toast

    Just whip up a garlicky Parmesan-Cheddar cheese topping and spread over English muffins to make this quick and easy prawn toast!

    Serves: 8 

    • 1 cup reduced-calorie mayonnaise
    • 150g chopped cooked prawn meat
    • 1 cup shredded Cheddar cheese
    • 1 cup Parmesan cheese
    • 1 teaspoon garlic salt
    • 8 English muffins, split

    1. Preheat oven to 175 degrees C. Line a baking tray with aluminium foil.
    2. Combine mayonnaise, prawn, Cheddar cheese, Parmesan cheese and garlic salt in a large bowl. Spread mixture over each muffin half. Arrange muffins on the baking tray.
    3. Bake until brown and bubbly, about 20 minutes.

    Cook's Note:

    To make ahead of time, cover and freeze shrimp toast until well chilled, about 30 minutes. Remove and cut shrimp toasts into quarters and place in a plastic bag. Return to freezer until ready to use.
