Biryani-Style Cauliflower Rice

    Cauliflower rice is seasoned with garam masala, turmeric, cumin and coriander in this grain-free and gluten-free version of biryani, an Indian-inspired dish.

    Serves: 4 

    • 1 head cauliflower, broken into florets
    • 50g butter
    • 1 clove garlic, crushed
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon ground turmeric
    • 1/4 teaspoon finely grated fresh ginger
    • 1 pinch cayenne pepper, or more to taste
    • salt and ground black pepper, to taste
    • 1 lime, cut into wedges
    • 1/4 cup chopped fresh coriander

    1. Pulse cauliflower florets in a blender or food processor until broken into small pieces about the size of rice.
    2. Heat butter in a large frying pan over medium-high heat. Add cauliflower rice, garlic, cumin, coriander, garam masala, turmeric, ginger and cayenne pepper. Cook, stirring occasionally, until cauliflower is softened, about 10 minutes. Season with salt and pepper.
    3. Remove pan from heat. Serve with lime wedges and freshly chopped coriander.
