Easy British Fruit Cake

    Easy to prepare in just one bowl, this British tea time fruit cake is studded with dried fruit and covered in a crunchy brown sugar topping.

    Serves: 8 

    • 1 3/4 cups (255g) self-raising flour
    • 115g unsalted butter, chopped
    • 1 1/4 cups (220g) dried mixed fruit
    • 1/2 cup (110g) caster sugar
    • 1 teaspoon mixed spice
    • 1/3 cup (80ml) milk
    • 1 egg
    • 2 tablespoons light brown sugar

    1. Preheat the oven to 175 degrees C. Grease a 15cm round cake pan.
    2. Place flour in a bowl. Rub butter into the flour until mixture resembles fine breadcrumbs. Add mixed fruit, caster sugar and mixed spice. Stir to combine. Add milk and egg and mix until batter is soft and easy to drop.
    3. Drop batter into the prepared pan. Sprinkle light brown sugar on top and pat down with the back of a spoon.
    4. Bake until a skewer inserted into the centre comes out clean, about 1 hour. Cool in pan for 10 minutes before turning out onto a wire rack to cool.
