Chorizo and Roasted Capsicum Pizzas

    These mini pizzas are my take on a 'meatlovers' pizza. Loaded with ham, chorizo sausage and vegies they are great for an easy Friday night dinner instead of buying takeaway.

    Serves: 4 

    • 4 mini pizza bases
    • 1/3 cup bottled pizza sauce
    • 1 cup grated pizza cheese
    • 1 chorizo sausage, thinly sliced
    • 1 cup shredded ham
    • 100g button mushrooms, thinly sliced
    • 1/2 red onion, thinly sliced
    • 75g roasted red capsicum, thinly sliced
    • 20g baby rocket leaves

    1. Preheat oven to 220 degrees C.
    2. Place pizza bases on a large baking tray. Spread with pizza sauce and sprinkle with half the cheese. Arrange chorizo, ham, mushrooms, onion and capsicum on top of the pizzas. Sprinkle with remaining cheese.
    3. Bake for 10-15 minutes or until crust is golden and crisp. Serve pizzas topped with rocket.
