Blackberry and Lemon Friands

    Friands are light and fluffy almond cakes that are a cross between a muffin and a tea cake. I have made these with blackberry and lemon as I think the flavour of the two compliments each other. You can use raspberries or blueberries if you prefer. If you don't have a friand pan, use a standard muffin pan.

    Makes: 12 friands

    • 6 egg whites
    • 150g butter, melted
    • 1 1/4 cups (200g) icing sugar, plus extra to dust
    • 1 1/4 cups (150g) almond meal
    • 1/2 cup (75g) plain flour
    • 1 teaspoon finely grated lemon rind
    • 1 tablespoon lemon juice
    • 150g fresh blackberries

    1. Preheat oven to 200 degrees C. Grease 12 x 1/3-cup rectangular or oval friand pans.
    2. Using a fork, whisk egg whites in a medium bowl until frothy. Add butter, icing sugar, almond meal, flour, rind, juice and half the berries; stir until just combined.
    3. Spoon mixture into prepared pan; sprinkle with remaining berries Bake for 18-20 minutes or until a skewer inserted in the centre comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool. Serve dusted with extra icing sugar, if desired.
