Prawn and Bacon Skewers

    I make these tasty and impressive looking prawn and bacon skewers when having friends over for a barbecue. They can also be made using pancetta or prosciutto instead of the bacon.

    Serves: 8 

    • 16 large king prawns, peeled, leaving tails intact
    • 4 cloves garlic, crushed
    • 1/4 cup olive oil, divided
    • salt and pepper, to taste
    • 8 rashers streaky bacon, rind removed
    • 1/4 cup lemon juice
    • 1 teaspoon finely grated lemon rind
    • 1/3 cup finely chopped fresh basil
    • 1/4 cup finely chopped fresh dill

    1. Place prawns, garlic and half the oil in a medium bowl; season with salt and pepper, then toss to coat prawns. Thread prawns lengthways onto 16 wooden skewers.
    2. Cut each slice bacon in half lengthways. Wrap one piece bacon around each prawn, leaving the tails exposed. Preheat a chargrill or barbecue over medium-high heat. Cook skewers, turning, for 4-5 minutes or until prawns change colour and are just cooked through.
    3. Meanwhile, whisk lemon juice, lemon rind, basil, dill and remaining oil in a small bowl until combined. Season with salt and pepper.
    4. Arrange prawns on a serving platter. Drizzle herb dressing over the skewers and serve.
