This creamy gnocchi recipe, using store bought gnocchi, is quick, easy and super tasty. It uses ingredients that you usually have lurking in your fridge, making it perfect for a last minute meal option.
Heat oil in a large frying pan over high heat. Add mushrooms, ham and garlic. Cook, stirring, for 4-5 minutes or until ham is crisp and mushrooms are tender.
Add cream, paprika and stock cube. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes or until sauce thickens. Add peas and cook for 2 minutes. Add spinach and cook, stirring, for 1 minute or until spinach wilts.
Meanwhile, cook gnocchi in a saucepan of boiling, salted water, following packet directions, until tender. Drain. Return gnocchi to pan. Add sauce to gnocchi. Toss to combine. Serve gnocchi sprinkled with cheese.
