Creamy Gnocchi with Ham and Peas

    This creamy gnocchi recipe, using store bought gnocchi, is quick, easy and super tasty. It uses ingredients that you usually have lurking in your fridge, making it perfect for a last minute meal option.

    Serves: 4 

    • 1 tablespoon olive oil
    • 100g sliced leg ham, cut into batons
    • 125g button mushrooms, sliced
    • 2 garlic cloves, crushed
    • 300ml thickened cream
    • 1/2 teaspoon smoked paprika
    • 1 chicken stock cube, crumbled
    • 1 cup frozen peas
    • 100g baby spinach leaves
    • 500g potato gnocchi
    • 1/3 cup shaved Parmesan cheese

    1. Heat oil in a large frying pan over high heat. Add mushrooms, ham and garlic. Cook, stirring, for 4-5 minutes or until ham is crisp and mushrooms are tender.
    2. Add cream, paprika and stock cube. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes or until sauce thickens. Add peas and cook for 2 minutes. Add spinach and cook, stirring, for 1 minute or until spinach wilts.
    3. Meanwhile, cook gnocchi in a saucepan of boiling, salted water, following packet directions, until tender. Drain. Return gnocchi to pan. Add sauce to gnocchi. Toss to combine. Serve gnocchi sprinkled with cheese.
