    A florentine is a sweet, chewy biscuit made with cornflakes, dried fruit, flaked almonds and chocolate. I have used glace cherries and dried apricots but you can use any combination of dried fruit you like such as dried fig and cranberry or sultana and dried pineapple or blueberries.

    Makes: 16 biscuits

    • 1 3/4 cups cornflakes
    • 1/4 cup (20g) flaked almonds
    • 60g glace cherries, chopped
    • 60g dried apricots, diced
    • 2/3 cup (160ml) sweetened condensed milk
    • 100g dark chocolate, melted

    1. Preheat oven to 180 degrees C. Line two baking trays with baking paper.
    2. Combine the cornflakes, almonds, cherries and apricots in a large bowl. Add condensed milk and stir to combine.
    3. Drop heaped tablespoons of mixture, about 4cm apart, onto prepared trays. Bake for 6–8 minutes in preheated oven or until golden. Cool on trays.
    4. Using a spoon, drizzle cooled florentines with melted chocolate. Set aside for 15 minutes or until chocolate sets. Serve.
