Hazelnut Friands

    With a moist nutty centre and crisp top, these hazelnut friands are the perfect treat to serve for morning or afternoon tea. The hazelnut meal can be replaced with almond or pecan meal if you prefer. Store them in an airtight container for up to 3 days.

    Serves: 12 

    • 6 egg whites
    • 185g butter, melted
    • 1 cup (100g) hazelnut meal
    • 1 ½ cups (240g) icing sugar
    • ½ cup (75g) plain flour
    • ¼ cup (35g) coarsely chopped hazelnuts

    1. Preheat oven to 200 degrees C. Grease a 12-hole (1⁄3-cup/80ml capacity) muf f in or friand tin.
    2. Place egg whites in large bowl; whisk lightly with fork until combined. Add melted butter, hazelnut meal, sugar and flour and stir until just combined (do not over mix, friands will become tough).
    3. Divide mixture among pan holes; sprinkle with chopped hazelnuts. Bake about 25 minutes or until a skewer comes out clean. Stand friands 5 minutes; turn, top-side up, onto wire rack to cool.
