Tropical Ice-blocks

    These tangy tropical fruit ice-blocks are refreshingly perfect on hot summer days. The pineapple juice can be changed to apple or orange juice if you prefer.

    Serves: 6 

    • 2/3 cup fresh passionfruit pulp
    • 1 1/2 cups unsweetened pineapple juice
    • 3/4 cup soda water
    • 2 teaspoons finely grated orange rind

    1. Spoon passionfruit into six ½-cup (125ml) capacity ice-block moulds. Freeze for 2 hours or until firm.
    2. Combine pineapple juice, soda water and orange rind in a jug.
    3. Pour pineapple mixture into ice-block moulds. Insert sticks and freeze for 4 hours or until frozen. Dip moulds in hot water for 5-10 seconds and gently pull ice-blocks out. Serve.
