Yoghurt Bark

    Yoghurt bark is the healthiest treat around! Spread your favourite yogurt on a tray, top with your favourite fruits, dark chocolate bits, nuts, seeds and more - then freeze. That's it! Children love this as a sweet snack, but it's great for the whole family.

    Ingredients
    Makes: 2 dozen pieces

    • For the bark
    • 500g full fat Greek yoghurt
    • 2 tablespoons maple syrup or honey, or to taste
    • 1/4 teaspoon vanilla extract (optional)
    • For the toppings
    • 4 tablespoons flaked almonds
    • 4 tablespoons freeze-dried blueberries
    • 2 tablespoons cacao nibs or chopped dark chocolate

    Directions

    1. Line two 23cm tins with baking paper. (Or if your freezer is big enough, use one large baking tray or Swiss roll tin.)
    2. Whisk together the yoghurt, maple syrup or honey and vanilla, if using. Divide mixture between the two tins and spread out using a spatula until about 5mm thick. Scatter the toppings evenly over top of each.
    3. Place tins in the freezer for at least 3 hours, or overnight. Remove from freezer and roughly break or slice into about 2 dozen pieces. Enjoy immediately, and keep any leftovers in the freezer.

    Tips

    You can keep pieces of frozen bark in a plastic freezer bag once frozen.
    Top with almost anything you like - you can use a variety of nuts and seeds, dried fruits, or even fresh berries.
    If your freezer is too small to fit two tins, halve the recipe to make just one tin of bark.
    You can use flavoured yoghurt, such as vanilla or strawberry, and then skip the sweetener and vanilla extract.

    This is so good!! I put mine a little too thick so it was more on a freezy kind of yogurt but still so good.
