Mocha Molten Puddings

    These delicious chocolate and coffee puddings have a cake-like crust on the outside and soft gooey centre on the inside. Be sure not to overcook them or the centre won't be molten.

    Serves: 6 

    • 150g dark chocolate, chopped
    • 120g butter, chopped
    • 2 teaspoons instant coffee granules
    • 2 eggs
    • 2 egg yolks
    • 1/3 cup (75g) caster sugar
    • 1/4 cup (35g) plain flour, sifted
    • 2 teaspoons cocoa powder, for dusting
    • thick cream, to serve

    1. Preheat oven to 200 degrees C. Grease a 6-hole (3/4-cup/180ml) muffin pan.
    2. Stir chocolate, butter and coffee in small saucepan over low heat until smooth; cool mixture for 10 minutes.
    3. Beat eggs, yolks and sugar in small bowl with electric mixer until light and fluffy. Gently fold in warm chocolate mixture and sifted flour.
    4. Spoon mixture into pan holes; bake 12 minutes. Gently turn puddings out onto serving plates; serve immediately dusted with cocoa powder and with thick cream.
