Thai Cucumber Salad

    This fresh and vibrant salad incorporates all the Thai flavours of sour, sweet, salty and spicy. Serve it with your favourite Thai curry or grilled meats.

    Serves: 4 

    • 2 tablespoons lime juice
    • 1 tablespoon grated palm sugar
    • 3 teaspoons sesame oil
    • 2 teaspoons fish sauce
    • 2 teaspoons soy sauce
    • 1 telegraph cucumber, diced
    • 2 small red thai chillies, finely chopped
    • 2 green onions, thinly sliced

    1. Combine the lime juice, sugar, oil, fish sauce and soy sauce in a medium bowl. Stir until sugar dissolves.
    2. Add the cucumber, chilli and green onion to the dressing and toss to combine. Cover and refrigerate for 30 minutes to allow flavours to develop. Serve.
