Lamb Meatball Pita Boats

    These delicious meatballs have all the flavours of Greece by adding olives, oregano and feta. Serving them in 'pita boats' makes them so interesting, even the kids love them!

    Ingredients
    Serves: 4 

    • 1/2 cup pitted kalamatta olives
    • 500g beef mince
    • 2/3 cup breadcrumbs
    • 1 egg
    • 3 teaspoons finely chopped oregano
    • 100g feta cheese, crumbled
    • salt and freshly ground black pepper
    • 2/3 cup Greek-style yoghurt
    • 1 clove garlic, crushed
    • 4 pocket pita bread
    • 25g baby rocket leaves
    • 2 tomatoes, diced
    • 1 lemon, cut into wedges

    1. Finely chop half the olives. Combine chopped olives, mince, breadcrumbs, egg, oregano, half the feta in a bowl. Season with salt and pepper. Roll tablespoons of the mixture into 16 meatballs
    2. Heat the oil in a large frying pan over medium-high heat. Add the meatballs and cook, turning occasionally, for 5-7 minutes or until cooked through.
    3. Meanwhile, combine the yogurt, garlic and 1 tablespoon warm water in a small bowl. Season with salt and pepper. Cut the pita breads in half crossways. Using your fingers, separate each half to form a pocket.
    4. Spread half the garlic yogurt inside each pita half. Fill with the rocket, tomato, the remaining feta and olives and the meatballs. Drizzle with the remaining garlic yogurt. Serve with lemon wedges.
