Prawn and Quinoa Paella

    I make this paella when I'm short on time and wanting something filling but lower in carbohydrates. Using the packaged cooked quinoa and brown rice reduces the cooking time by half and is a healthier option to using white rice.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 brown onion, finely chopped
    • 1 clove garlic, crushed
    • 1 yellow capsicum, diced
    • 1 (450g) packet microwave brown rice and red quinoa blend
    • 1 teaspoon smoked paprika
    • 2/3 cup chicken stock
    • 600g peeled raw king prawns
    • 200g cherry tomatoes, halved
    • 120g baby spinach leaves
    • 1 lemon, cut into wedges

    1. Heat oil in a large deep frying pan over medium-high heat. Add the onion, garlic and capsicum and cook stirring, for 5 minutes or until onion softens.
    2. Add the rice blend and paprika and cook, stirring, for 1 min. Add the stock and bring to the boil. Reduce the heat to low and cook, covered, for 5 minutes.
    3. Add the prawns and tomatoes. Cook, covered, for 2-3 minutes or until prawns just change colour. Add the spinach and cook, uncovered for 1-2 minutes or until the spinach wilts. Serve with lemon wedges.
