Savoury Muffins (veggie)

    • 2 cups Self-Raising Flour
    • 3/4 tsp Salt
    • 270g Carrots, coarsely grated
    • 250g Butternut Pumpkin, peeled, deseeded, coarsely grated
    • 100g Zucchini, trimmed, coarsely grated
    • 3/4 cups Cheddar, coarsely grated
    • 2 tbsp Fresh Chives, chopped
    • 1/2 cup Milk
    • 3 Eggs, lightly whisked
    • 3 tbsp Butter, melted + extra for greasing


    1. Preheat oven to 210°C.
    2. Sift the flour and salt. Add the carrots, pumpkin, zucchini, cheddar and chives. Toss to combine until the vegetables are well coated with the flour.
    3. Whisk the milk, eggs and butter. Pour into the centre of the vegetable mixture and fold in until just combined. Don't overmix or the muffins will be tough.
    4. Spoon the mixture into the greased muffin tin and bake in for 20 minutes or until a skewer inserted into the centre of the muffins comes out clean.
