Fruit Salad with Lemon, Honey and Mint Dressing

    This fruit salad uses all the flavours of summer by mixing watermelon, strawberries, peaches, nectarines, pears and grapes in a lemon, honey and mint dressing.

    Serves: 8 

    • 4 cups cubed seeded watermelon
    • 2 cups sliced fresh strawberries
    • 2 large fresh peaches, cut into cubes
    • 2 large nectarines, cut into cubes
    • 1 corella pear, cut into cubes
    • 1 cup seedless grapes, halved
    • 2 tablespoons fresh lemon juice
    • 1/4 cup finely chopped fresh mint
    • 2 teaspoons finely grated lemon rind
    • 1 tablespoon honey

    1. Combine watermelon, strawberries, peaches, nectarines, pear and grapes in a large mixing bowl.
    2. Whisk lemon juice, mint, lemon rind and honey together in a small bowl; drizzle over the fruit mixture and toss to coat.
    3. Refrigerate 1 hour before serving.

    How much lemon juice? Allergic to eggs, mayo, vinegar and some of the fruits, but this looks like a good option for the dressing portion for salad but nothing listed on amounts of juice....  -  17 Feb 2014  (Review from Allrecipes USA and Canada)
