Wholemeal Date Biscotti

    This biscotti is full of fibre and low in fat and sugar making it the perfect morning or afternoon snack. You will need one small ripe banana for this recipe. The dates can be replaced with dried figs or sultanas.

    Makes: 18 biscotti

    • 1 1/2 cups (225g) wholemeal flour
    • 1/4 cup (55g) brown sugar
    • 1/3 cup (80ml) vegetable oil
    • 1 egg, lightly beaten
    • 1/2 cup mashed banana
    • 1/3 cup finely chopped dried dates

    1. Preheat oven to 180 degrees C. Line a large baking tray with baking paper.
    2. Combine the flour and sugar in a large bowl. Combine the oil, egg and mashed banana in a jug. Pour into flour mixture and mix to combine. Stir in the dates.
    3. Shape mixture on a lightly floured surface into a 22cm-long log. Place log on prepared tray and flatten slightly to 2cm thickness. Bake for 30 minutes or until firm. Cool.
    4. Reduce oven temperature to 140 degrees C. Using a serrated knife, cut the log into 1cm-thick slices. Spread out in a single layer on tray. Bake for 20 minutes, turning once halfway through cooking time, or until crisp. Cool on tray.


    Store the biscotti in an airtight container for up to 2 weeks.
