Cranberry, Fig and Nut Trail Mix

    This trail mix is the perfect snack to graze on and feel relatively guilt free doing it! Store it in an airtight container for up to 2 weeks. To make it lunch box friendly for the kids, replace the nuts with extra sunflower seeds and pepitas or add some bran flakes or quinoa puffs.

    Ingredients
    Serves: 8 

    • 1/2 cup chopped pecans
    • 1/2 cup pistachio kernels
    • 1/4 cup shredded coconut
    • 2 tablespoons pepitas
    • 2 tablespoons sunflower seeds
    • 1/3 cup dried cranberries
    • 1/3 cup chopped semi-dried figs

    1. Preheat oven to 200 degrees C.
    2. Place the nuts and on an oven tray. Roast for 3 minutes. Stir. Add the coconut, pepitas and sunflower seeds and roast for 2-3 minutes or until browned lightly. Cool.
    3. Combine the nut mixture and the dried fruit in a medium bowl. Serve.
