This sweet version of a jaffle or toasted sandwich is perfect for a snack or for breakfast on the go. I use fresh peaches but if they are not in season, canned sliced peaches can be used, just make sure you drain them well.
Combine the cream cheese, honey, cinnamon and rind in a small bowl. Spread two slices bread with the cheese mixture. Top with peach and sandwich with remaining bread.
Heat a medium frying pan over medium-high heat. Spread both sides of each sandwich with the butter. Cook sandwiches in pan for 1-2 minutes each side or until bread is golden and toasted. Serve jaffles cut into fingers.
