Peach and Cream Cheese Jaffle

    This sweet version of a jaffle or toasted sandwich is perfect for a snack or for breakfast on the go. I use fresh peaches but if they are not in season, canned sliced peaches can be used, just make sure you drain them well.

    Serves: 2 

    • 60g spreadable cream cheese
    • 3 teaspoons honey
    • 1/4 teaspoon ground cinnamon
    • 1/2 teaspoon finely grated orange rind
    • 2 ripe yellow peaches, stone removed, thinly sliced
    • 20g butter, softened
    • 4 thick slices multigrain bread

    1. Combine the cream cheese, honey, cinnamon and rind in a small bowl. Spread two slices bread with the cheese mixture. Top with peach and sandwich with remaining bread.
    2. Heat a medium frying pan over medium-high heat. Spread both sides of each sandwich with the butter. Cook sandwiches in pan for 1-2 minutes each side or until bread is golden and toasted. Serve jaffles cut into fingers.
