Pork Sausage Sub with Fennel Mayo

    I like to use gourmet flavoured thick pork sausages, such as apple cider or fennel and garlic, for this recipe, use any flavour you like. These subs are perfect for any easy Sunday night supper.

    Serves: 4 

    • 1 tablespoon olive oil
    • 6 thick pork sausages
    • 1/2 cup whole-egg mayonnaise
    • 1 baby fennel, finely chopped
    • 2 tablespoons chopped fennel fronds
    • 1 clove garlic, crushed
    • 1 tablespoon lemon juice
    • salt and freshly ground black pepper
    • 2 baguettes, halved
    • 50g baby rocket leaves
    • 250g cherry tomatoes, halved

    1. Heat the oil in a large frying pan. Cook the sausages, turning occasionally, for 6-8 minutes or until cooked through. Chop sausages coarsely.
    2. Combine the mayonnaise, fennel, fennel fronds, garlic and lemon juice in a small bowl. Season with salt and pepper.
    3. Cut down the centre of each baguette piece to open up. Fill with rocket, tomato, sausage and top with fennel mayo. Serve.
