Satay Chicken Mince and Snow Pea Stir-fry

    This easy and delicious stir-fry can be made with chicken mince or chicken breast strips. The mince version is very versatile, it can be served on steamed rice, Asian noodles or in lettuce leaves like a sang choy bow.

    Serves: 4 

    • 3 teaspoons sesame oil
    • 500g chicken breast mince
    • 1 red capsicum, diced
    • 150g snow peas, halved
    • 125g green beans, halved
    • 2 cloves garlic, crushed
    • 1 teaspoon grated fresh ginger
    • 1 teaspoon crushed red chilli
    • 1/4 cup crunchy peanut butter
    • 2 tablespoons oyster sauce
    • 1/2 cup coconut cream
    • 1/3 cup fried shallots
    • steamed rice, to serve

    1. Heat the oil in a wok over high heat. Stir-fry the chicken mince, breaking up any lumps, for 2-3 minutes or until browned lightly. Add the capsicum, snow peas and beans and stir-fry for 3 minutes or until just tender.
    2. Add the garlic, ginger and chilli and stir-fry for 1 minute. Add the combined peanut butter, oyster sauce and coconut cream. Stir-fry for 2 minutes or until heated through.
    3. Serve the satay chicken sprinkled with the fried shallots with the steamed rice on the side.


    Find fried shallots in the Asian food aisle of most major supermarkets. You can replace them with chopped roasted peanuts if you prefer.
