Three Bean Picnic Salad

    Three different types of beans are tossed with red onion, capsicums, celery, fresh coriander and salad dressing to make this tasty and colourful salad that's perfect for a picnic.

    Serves: 6 

    • 1 (400g) tin black beans, drained
    • 1 (400g) tin kidney beans, drained
    • 1 (400g) tin chickpeas, drained
    • 1 green capsicum, diced
    • 1 large red onion, diced
    • 1 bunch fresh coriander, chopped
    • 1 celery stalk, diced
    • 2 tablespoons Italian-style salad dressing
    • 1 lemon, juiced
    • salt and ground black pepper to taste

    Preparation:20min  ›  Extra time:5min resting  ›  Ready in:25min 

    1. Mix black beans, kidney beans, chickpeas, green capsicum, red onion, coriander and celery in a large bowl. Add salad dressing, lemon juice, salt and pepper; toss to coat. Let stand about 5 minutes for flavours to blend. Chill if desired.

    This was fantastic - made with almond crusted tilapia and the bean salad was a great side dish! The Italian dressing and lemon really gives it a nice flavor, along with the cilantro.     I really like this recipe. I must include that I made it the first time without onions since I did not have any available and it turned out great. The second time I made sure to include the large, red onion and it was a bit too strong for my husband and I.
