Delicious Pan-Fried Baka Bana

    Baka bana is a basic traditional Indonesian vegan finger food, where ripe plantains are pan-fried to perfection for a quick and easy snack.

    Ingredients
    Serves: 4 

    • 1/2 cup (75g) plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 1/2 cup (125ml) warm water
    • 1 large ripe plantain, sliced
    • vegetable oil for deep-frying

    Directions

    1. Combine the flour, bicarb and salt in a bowl. Add warm water, stirring constantly, until a pancake-like batter forms, about 2 minutes. Dip plantain slices into the batter.
    2. Heat vegetable oil in a deep frying pan or wok over medium heat. Cook plantains, in batches, for 2 minutes or until golden. Flip and cook for 1 minute more. Drain on paper towels.
