Cranberry-Chocolate-Orange Muffins

    Dried cranberries are plumped up in boiling water and mixed with an easy muffin batter laced with fragrant orange rind and chocolate chips.

    • 1 cup (120g) dried cranberries
    • 1 tablespoon (6g) grated orange rind
    • 1/2 teaspoon (2g) bicarbonate of soda
    • 1 cup (250ml) boiling water
    • 1/2 cup (110g) brown sugar
    • 1/4 cup (60ml) vegetable oil
    • 1 egg
    • 1 teaspoon (5ml) vanilla extract
    • 1 3/4 cups (220g) plain flour
    • 2 teaspoons (9g) baking powder
    • 1/2 cup (85g) dark chocolate chips

    1. Preheat the oven to 190 degrees C. Grease a 12-hole (1/3-cup/80ml) muffin pan or line cups with paper cases.
    2. Place the cranberries, orange rind and bicarb in a bowl. Pour boiling water on top. Let stand at room temperature for 5 minutes.
    3. Mix the brown sugar, oil, egg, and vanilla extract together in a bowl. Add the cranberry mixture and mix well.
    4. Stir flour and baking powder together in a separate bowl; stir into the cranberry mixture until just combined. Fold in the chocolate chips gently. Spoon batter evenly into the prepared tin.
    5. Bake in the oven about 20-25 minutes or until golden brown and tops spring back when touched.
