Baked 'Fried' Crumbed Eggplant

    Oven-fried eggplant is a baked version of family-friendly dish with a crumb of Parmesan cheese and breadcrumbs seasoned your way.

    Serves: 4 

    • 2 tablespoons olive oil
    • 2 cups (200g) packaged breadcrumbs
    • 1/2 cup (40g) grated Parmesan cheese
    • 1/4 teaspoon garlic powder, or to taste
    • 1/4 teaspoon dried oregano, or to taste
    • 1/4 teaspoon dried basil, or to taste
    • salt and ground black pepper to taste
    • 2 eggs, lightly beaten
    • 1 splash water
    • 1 eggplant, peeled, sliced into 6mm thick rounds

    1. Preheat oven to 175 degrees C. Line a baking tray with aluminum foil. Brush with about 1 teaspoon of the olive oil.
    2. Combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, basil, salt and pepper in a shallow dish.
    3. Combine the eggs with a splash of water in a separate shallow dish. Coat both sides of an eggplant slice with the egg mixture. Dip eggplant slice in the breadcrumb mixture to coat. Place slice onto the prepared tray. Repeat coating the remaining eggplant slices. Drizzle remaining olive oil over the crumbed slices.
    4. Bake in the preheated oven, turning halfway through cooking, about 20-25 minutes or until golden brown.

    Cook's Note:

    If desired brownness is not achieved with baking, you can always put the pan under the broiler until desired brownness is reached.
