Acai Berry Smoothie Bowl

    This is my favourite breakfast bowl, made with frozen acai berries and fresh mixed berries, almond milk, bananas and oats. This recipe makes enough for 2 servings.

    Serves: 2 

    • 1 1/2 cups fresh mixed berries, divided
    • 1 1/4 cups almond milk
    • 2 bananas
    • 1/2 cup oats
    • 120g frozen unsweetened acai pulp
    • 1 tablespoon dried coconut flakes
    • 2 teaspoons maple syrup

    1. Place 1 cup berries, almond milk, bananas, oats and acai pulp in a blender; blend until smooth. Pour into 2 bowls and top with coconut flakes and remaining fresh berries. Drizzle with maple syrup.
