Gluten Free Avocado Brownies

    Gluten free brownies with only natural sugars added. No one will ever know they contain avocados. I know it sounds crazy, but the avocados really do work! They make these brownies very creamy.

    • 175g 70% dark chocolate
    • 1 tablespoon coconut oil
    • 3 avocados - peeled, pitted and diced
    • 3 eggs
    • 3/4 cup honey
    • 1/4 cup unsweetened cocoa powder
    • 1 tablespoon coconut flour
    • 1 teaspoon vanilla extract
    • 1 teaspoon bicarb of soda
    • 1 teaspoon salt

    1. Preheat oven to 180 degrees C. Lightly grease a baking tin.
    2. Melt chocolate with coconut oil in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
    3. Place diced avocado in a food processor; blend until completely smooth.
    4. Whisk eggs, honey, cocoa powder, coconut flour, vanilla extract, bicarb of soda and salt in bowl until well mixed. Add avocado puree; stir until well combined. Pour brownie mixture into the prepared tin.
    5. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 35 to 40 minutes.
