Smokey BBQ Chicken Wings

    These sweet and sticky chicken wings have a delicious smokey flavour with a touch of spice that will be a hit when entertaining. To save time, the wings can be marinated the day before and cooked just before serving.

    Ingredients
    Serves: 6 

    • 1/2 cup barbecue sauce
    • 1/3 cup tomato sauce
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons lemon juice
    • 1 tablespoon wholegrain mustard
    • 2 cloves garlic, crushed
    • 2 teaspoons smoked paprika
    • 1 teaspoon dried red chilli flakes
    • 2kg chicken wings, halved

    1. Combine the sauces, vinegar, lemon juice, mustard, garlic, paprika and chilli in a large bowl. Add the chicken wings and toss to coat. Cover. refrigerate for 6 hours or overnight.
    2. Preheat the oven to 200 degrees C. Line two baking trays with foil. Grease the foil with oil spray. Remove wings from the marinade and arrange, in a single layer, on the prepared trays. Reserve the marinade. Bake wings, turning halfway through cooking, for 45 minutes or until cooked through.
    3. Meanwhile, place the reserved marinade and 1/2 cup water in a small saucepan over medium-high heat. Bring to the boil. Reduce the heat and simmer, uncovered, for 5 minutes or until thickened slightly.
    4. Arrange the wings on a serving platter. Drizzle with the sauce. Serve.

    TIP:

    Serve the chicken wings with potato chips or wedges.
