Simple Pea Salad

    This recipe involves just two main ingredients: fresh garden peas and lemon! The freshness and flavour of the raw peas pop in your mouth! Serve as a summer side dish or toss with leftover pasta, salmon and fresh mint if you need something more filling.

    • 100g fresh, uncooked garden peas
    • 1/2 lemon, juiced
    • salt and freshly ground black pepper to taste

    1. Mix raw peas, lemon juice, salt and pepper together in a bowl.

    This is so simple, and so delishious that it makes the perfect salad for warm days! I used a bag of frozen peas, after letting it come to room temp. ( don't cook them!) Added a bit more lemon juice ( I love lemons,) and zest from the lemon. Sea salt and fresh ground pepper.
