Spicy Raita

    Serve this mint, green chilli and coriander raita dip alongside kebabs, curries or samosas to notch up the flavour.

    Serves: 4 

    • 1 green chilli pepper, stemmed
    • 2 tablespoons chopped fresh mint
    • 2 tablespoons chopped fresh coriander
    • 4 teaspoons water, or as needed
    • 1 cup (250ml) Indian-style yoghurt
    • salt to taste

    1. Combine chilli pepper, mint, coriander and 2 teaspoons water in a blender; grind into a paste.
    2. Stir chilli paste and yoghurt together in a bowl. Thin down to your desired consistency with remaining water. Season with salt.
