Roasted Asparagus, Tomato and Feta Salad

    Roasted asparagus with cherry tomatoes, feta cheese and lettuce makes a salad that's so flavourful you don't even need a dressing.

    Serves: 4 

    • 1 bunch fresh asparagus, trimmed and cut into bite-size pieces
    • 2 tablespoons olive oil
    • 1 pinch garlic granules, or to taste
    • 225g lettuce leaves, cut into bite-size pieces
    • 180g cherry tomatoes, halved
    • 125g feta cheese, crumbled

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 200 degrees C.
    2. Place asparagus in a large bowl. Drizzle olive oil over asparagus and season with garlic granules; toss well. Transfer asparagus to a baking tray.
    3. Bake in the preheated oven until asparagus becomes tender, about 20 minutes.
    4. Place lettuce in the same bowl used for asparagus; top with tomatoes, feta cheese and asparagus.

    Delicious--I love anything with feta. I added salt and pepper as many of the reviews suggested, but the salad was just too dry for me. I ended up putting a little balsamic dressing on mine. Loved that it was so yummy and so easy!  -  25 May 2019  (Review from Allrecipes USA and Canada)


    I made this for Easter lunch. It was a hit. Only changes: used garlic salt as most said salt would be needed, roasted in oil young green beans, tomatoes, as well as asparagus and sauteed mushrooms in olive oil so less drizzle needed over lettuce.     I make this all the time. To give it some more taste though, I always add feta "juice" to the salad. Gives it some saltiness so you don't need to add salt. And it mixes nicely with the olive oil.
