Banana Quinoa 'Rice' Pudding

    Banana and coconut 'rice' pudding made with quinoa makes a great dessert that's high in fibre and gluten-free.

    Ingredients
    Serves: 6 

    • 3/4 cup quinoa
    • 1 1/2 cups (375 ml) water
    • 2 ripe bananas
    • 1 cup (250 ml) milk
    • 1 cup (250 ml) coconut milk
    • 4 tablespoons honey, divided
    • 1 tablespoon butter
    • 1 teaspoon ground cinnamon, divided
    • 1/4 teaspoon salt

    1. Rinse quinoa in a kitchen paper-lined colander until water is no longer milky. Transfer quinoa to a saucepan, add 1 1/2 cups water and soak for 30 minutes.
    2. Bring quinoa and water to the boil, reduce heat to low, cover and simmer until water is absorbed, about 15 minutes.
    3. Blend bananas, whole milk, coconut milk, 3 tablespoons honey, butter, 1/2 teaspoon cinnamon and salt together in a blender until smooth.
    4. Stir milk mixture into quinoa, raise heat to medium; cook and stir constantly until pudding becomes thick, about 10 minutes.
    5. Transfer quinoa to serving dish and refrigerate until cold, about 1 hour. Drizzle 1 tablespoon honey over the dessert; sprinkle with 1/2 teaspoon cinnamon.

    Oh my, this is crazy good! Don't care that it's quinoa, it tastes just like delicious rice pudding. I didn't have whole milk on hand, so I used a combination of skim milk and some FF half-and-half. Also, used Trader Joe's light coconut milk in place of the full fat version. IMO the banana flavor is the superstar in this recipe, and one that I've never seen before in rice pudding. You can taste all the different layers of flavor working with each other harmoniously.
