Pineapple Ice Cream

    This easy, homemade pineapple ice cream is made by whisking cream, pineapple juice, sugar and lemon juice together until smooth and creamy.

    • 1 cup (250ml) whipping cream
    • 2/3 cup (170ml) pineapple juice
    • 1/3 cup caster sugar, or to taste
    • 1 teaspoon fresh lemon juice

    1. Whisk cream, pineapple juice and sugar in a bowl until sugar is dissolved; stir in lemon juice. Refrigerate until well chilled, at least 6 hours.
    2. Transfer pineapple mixture to an ice cream maker and process according to manufacturer's instructions.
