Mixed Salad with Grapefruit-Yoghurt Dressing


    A colourful vegetable salad that's delicious on its own, or as a side dish for barbecued salmon or steak.

    Serves: 4 

    • For the salad
    • 1/2 soft lettuce, sliced
    • 1 handful rocket leaves
    • 1 yellow capsicum, sliced
    • 1 red capsicum, sliced
    • 8 radishes, sliced
    • For the dressing
    • 2 tablespoons plain yoghurt
    • 2 tablespoons grapefruit juice
    • 1 teaspoon Dijon mustard
    • 1 teaspoon honey
    • 2 teaspoons chopped chives
    • salt and pepper to taste

    1. In a large salad bowl combine lettuce, rocket, capsicums and radishes.
    2. Whisk the ingredients for the dressing together in a small bowl. Season with salt and pepper to taste. If the dressing is too thick, add 1-2 tablespoons of water.
    3. Pour dressing over salad and toss.
