Barbecued Lemon Lemonade

    Barbecuing your lemons before making them into lemonade makes for a deliciously different refresher. Once trying this it will be hard to go back to the traditional style!

    Serves: 8 

    • 500ml water
    • 170g honey
    • 3 sprigs mint
    • 15 lemons, halved
    • 200g granulated sugar
    • 1L water
    • 1 to 2 lemons, sliced (for garnish)

    1. Light charcoals in a barbecue.
    2. For the syrup, combine water, honey and mint in a saucepan. Bring to a simmer.
    3. Once coals are hot, dip lemon halves in sugar, then place cut side down on the barbecue cooking grate. Add the leftover sugar to the syrup and cook till dissolved.
    4. Remove lemon halves from heat once slightly charred on the cut side. Let cool.
    5. Meanwhile, barbecue lemon slices till grill marks are made on both sides. Remove from heat and set aside.
    6. Once cooled, juice lemons and pour juice into a large pitcher. Stir in syrup. Add 1 litre water and ice. Garnish with additional mint leaves, if liked.
