Strawberry Smoothie Bowl

    Smoothie bowls are basically a smoothie served in a bowl which allows you to add a wide range of toppings for a nutritional boost at breakfast time! They are easy to whip up if you have a good stock of frozen fruit in your freezer.

    Serves: 2 

    • For the smoothie
    • 225g frozen strawberries
    • 160g frozen pineapple chunks
    • 200g plain Greek yoghurt
    • 1/2 cup (125 ml) coconut water
    • 2 tablespoons frozen acai berry pulp, or as desired
    • Topping ideas
    • 1 kiwi, peeled and sliced
    • 1/2 banana, sliced
    • 75g fresh blueberries
    • 60g fresh raspberries
    • 2 tablespoons flaked almonds
    • 2 tablespoons granola
    • 1 teaspoon chia seeds (optional)

    1. Blend strawberries, pineapple, yoghurt, coconut water and acai in a blender until smooth; pour into a bowl. Top smoothie with kiwi, banana, blueberries, raspberries, almonds, granola and chia seeds.

    Acai berry pulp:

    You can buy acai berry pulp in most health food shops.

    I used this recipe for the acai base and altered the topping to my taste and what I had on hand. This was my second attempt making a acai bowl and this will now be to go-to recipe! My first attempt went wrong after I put something together based on photos and was way off.     I loved this recipe! Instead of coconut water I put in regular water and it was pretty good! Next time, I would also put in ice cubes, as it got a little warm after awhile. Also, I didn't have kiwi or pineapple, but I put bananas and blueberries and strawberries in for a nice flavor. I am also allergic to nuts, so opted out on those. Will make again!
