Strawberry and Spinach Quinoa Salad

    This strawberry, lemon, spinach, feta and quinoa salad is fresh, sweet and filling. You can adjust quantities to how much you would like!

    Ingredients
    Serves: 8 

    • 1 cup quinoa
    • 2 cups water
    • 4 teaspoons lemon juice
    • 1 teaspoon olive oil
    • 60g baby spinach, or to taste
    • 2 cups walnuts
    • 120g feta cheese, crumbled
    • 75g thinly sliced strawberries, or to taste

    Directions

    1. Place quinoa in a saucepan; add water and bring to the boil. Reduce heat; cover. Simmer until quinoa is tender, 12 to 15 minutes. Drain; cool.
    2. Combine lemon juice and olive oil in a small bowl; stir until dressing is combined.
    3. Pour half of the quinoa into a large salad bowl. Add 1 handful of baby spinach; stir together. Add 1 handful of walnuts, feta cheese and strawberries; stir until mixed. Repeat layering and stirring quinoa, spinach, feta cheese and strawberries until all ingredients are mixed together. Top with lemon-olive oil dressing.

    Light, fresh and delicious! I did eyeball the oil and lemon juice (to taste) and added just a bit of salt, but those were my only changes.     Very good salad - even the kids liked it! I did not make the dressing, but instead, used Lemon Chia bottled dressing. Could really substitute any dressing. I have so many bottled dressings already, I didn't need to make a separate dressing for this salad. Healthy and yummy!
