Fudgy Chocolate Brownies

    Super fudgy, rich and chocolaty brownies.

    • 200gms 70% Dark Chocolate
    • 250gms Brown Sugar
    • 150gms Unsalted Butter
    • 1 tsp Vanilla Essence
    • 2 Large Eggs, at fridge temperature
    • 125gms Plain Flour


    1. Preheat oven to 160 degrees Celsius (fan forced).
    2. In a large glass bowl combine butter, chocolate and brown sugar.
    3. Place in microwave at high heat for 90 seconds then stir until chocolate melted and well combined.
    4. Allow to cool slightly then stir in vanilla.
    5. Stir in eggs one at a time until just mixed through.
    6. Add in flour (unsifted) and fold in until just combined.
    7. Scrape into a 20cm x 20cm baking tray lined with baking paper (extending over edge of tin).
    8. Bake for 20 to 25 minutes until a skewer inserted into the middle comes out with just moist crumbs.
    9. Allow to cool slightly in tin then lift out onto a wire rack and allow to cool completely. Decorate as desired and cut into even squares.


    I used a maple syrup buttercream and candied pecans as decoration. Another time i used chocolate ganache.
